Vale das Éguas tinto

In the hippodrome of the Roman spas of Miróbriga, horses born and bred in Vale das Éguas used to run, which were chosen for their unique characteristics of competitiveness, endurance, speed and elegance. Today, in the same valley, there is the Herdade do Cebolal vineyard that produces this elegant and balanced wine, with a good aroma and smooth finish.

The temperature on summer days is 34-36ºC and during the night, the temperature is 12º to 15ºC. This region is known for having large thermal expanses.
The harvest was done at the end of August according to the climatic conditions and the ripening of the grapes. The bunches are selected and picked by hand. The winemaking maintains a balance between viticultural traditions and new technologies, knowledge and trends. This red wine ferments in old clay lagares without temperature control for one month, and then ages for one year in stainless steel vats.
The wine presents a violet color with aromas of red fruits, flowers (violets), with an acidity and freshness typical of the region and maritime proximity. This red has a present tannin and a very interesting complexity and structure.

Cheese, sirloin steak, codfish dishes, sardines.
Serve between 14-16ºC.
